Summery Broccoli Salad

  • 1 Large bowl

Ingredients
  

Broccoli Salad

  • 2 heads broccoli
  • 2 apples
  • lemon juice
  • 1 carrot
  • 1 C blueberries
  • 1 C dried cranberries
  • 1 C sunflower seeds
  • 1 C pecans
  • 2.5 Oz bacon finely chopped

Dressing

  • 1 C mayonnaise
  • 1/3 C milk
  • 1/3 C apple cider vinegar
  • 2/3 C sugar or alternative
  • 2 Tbsp poppy seeds

Instructions
 

Broccoli Salad

  • Coarsely chop broccoli and place in large bowl. Coarsely chop apples and brush with lemon juice to prevent browning; add to bowl.
  • Shred carrot and add to bowl with blueberries, cranberries, sunflower seeds, pecans and bacon.

Dressing

  • To make dressing: Mix mayonnaise, milk, apple cider vinegar, sugar and poppyseeds. Pour over broccoli salad and mix well.
