- 1 Skillet
- 1 Pot or rice cooker
- 1 Casserole dish
Ingredients
- 1 Lb ground beef grass finished preferred
- 1 Tbsp onion minced
- 1 Tbsp garlic powder
- 1 C rice
- 14.5 Oz diced tomatoes
- 10.7 Oz enchilada sauce
- 15 Oz black beans rinsed
- 15 Oz whole corn
- 1.5 C cheddar cheese shredded & divided
- 2 Tbsp mesquite seasoning
- Cilantro for topping
- Green onions for topping
Instructions
- Preheat oven to 350°F
- In skillet, brown ground beef with minced onion and garlic powder. Drain and set aside.
- Cook rice according to package instructions.
- In casserole dish, mix meat, tomatoes, enchilada sauce, black beans, corn, rice, 1 cup cheddar cheese and mesquite seasoning. Bake, covered, 20 minutes.
- Top with remaining cheese, cilantro and green onions.
