Versatile Enchilada Casserole

  • 1 Skillet
  • 1 Pot or rice cooker
  • 1 Casserole dish

Ingredients
  

  • 1 Lb ground beef grass finished preferred
  • 1 Tbsp onion minced
  • 1 Tbsp garlic powder
  • 1 C rice
  • 14.5 Oz diced tomatoes
  • 10.7 Oz enchilada sauce
  • 15 Oz black beans rinsed
  • 15 Oz whole corn
  • 1.5 C cheddar cheese shredded & divided
  • 2 Tbsp mesquite seasoning
  • Cilantro for topping
  • Green onions for topping

Instructions
 

  • Preheat oven to 350°F
  • In skillet, brown ground beef with minced onion and garlic powder. Drain and set aside.
  • Cook rice according to package instructions.
  • In casserole dish, mix meat, tomatoes, enchilada sauce, black beans, corn, rice, 1 cup cheddar cheese and mesquite seasoning. Bake, covered, 20 minutes.
  • Top with remaining cheese, cilantro and green onions.
